Kentish dessert apples are pressed and fermented to create a delicate apple spirit which captures the aroma of a country orchard on a late summer's day. This spirit is then aged for two years in American oak casks to give the spirit a gentle spiced character. The result is the spirit equivalent of a buttery apple crumble.
