Sparkling Dry Co-Ferment
This is a spontaneous co-ferment of Herefordshire perry pears & a wort of Czech grown barley in the style of světlý ležák (light lager) with Saaz hops. After 6 months, the barrels were blended, then bottled & conditioned for 6 months before being released.
Aromatically it represents the pear & the cereal grist well; there's a touch of yeastiness underlying the fruity esters of the perry pears, & the lager base & perry fruit are interacting to give a unique drinking experience
